I am happy to make some recommendations, but it would be helpful if we
had some more info on your needs: what is the background & skill level
of your students? what are the pedagogical goals for the class? what
content areas are you looking to cover?

Also, many bookstores (at least in the US) will photo-copy
out-of-print texts for classes like yours. They just need to get
copyright permissions and possibly pay royalties.
