Bill, the best "table" I've seen is Bruce Stark's manual (I don't have one
handy; I left mine at my last place of employment thinking it would be useful
for my successor).  He's in CT, and I believe a member of the list (though if
he doesn't care for fruitcake he may have unsubbed).  The part I found most
helpful is that he recognises the differences in processing archival material
and personal papers, two different "animals" and also the different levels of
prior "maintenance" the papers have received before being received by the
repository.  I.e., some arrive in fairly good order, some in fair order, and
some your basic mess.  Also, he takes into account the size of a collection
which makes a world of difference in length of time per cubic foot when it
comes to processing.  I've used it as a guide for estimating ever since I
took his workshop at NEA several years ago, and it's always come pretty
close--closer than anything else I've encounterred--for estimating processing
time.
