If you google "Starbucks, history of," you will find it is named after Ahab's first mate. I've always thought that they might have left out the apostrophe because it would have been esthetically unpleasing in their circular logo. In any event, there are considerations other than "grammar" that move advertisers, as we all know. And well there might be.
