I'm not sure if what is wanted is wine consumption figures for the whole
of the 19th century or only the earlier part, but the obvious place to
look is Thomas Pinney, History of Wine in America.  On p. 374 there's
a graph of per capita wine consumption 1870-1900.  The source is the US
Dept of Agriculture Yearbook, and maybe they record earlier periods.
