Re liquor industry:

I have not gone looking for the primary records on Canada's alcohol
industry, but years ago I did find the 1871 manuscript census,
industrial schedule,  useful for an overview of the brewing sector in
Ontario, which was still localized and somewhat decentralized.

You will not find many detailed studies of the brewing and distilling
sectors in the academic literature, because these companies, for a
number of reasons, have not been keen on opening their corporate
records.
