Karl,
I've learned to call these appositive adjectives, and yes they do come in pairs, usually. Sometimes you can have single word plus modifier. "Edith, proud of her vote, refused to remove her bumper sticker after the election."

AdjP can be appositives too. Or at least that's how I interpret trailing
modifiers in sentences such as
Lear was a foolish king--narcissistic and vain.
My intuitive sense, though, is that we're much more likely to see them
in coordinate pairs or series than alone as a single AdjP..
