When I've heard "Missippi" and "Miz" in the South--I taught at Georgia State in Atlanta for six years, they seemed to parse as three and two syllables respectively.  The "miss" of "Missippi" the [s] was lengthened as if there was another syllable hidden there.  I suspect that the phonological history of the pronunciation would have involve a voiceless schwa between the two voiceless fricatives.  This is a common phenomenon in Spoken English.  In the case of "Miz," the vowel is long and diphthongized and could be analyzed as two syllables.  Certainly the length it carries supports such an analysis.

We often say "Missippi" but we write "Mississippi."  Offlt enough I have never seen Mississippi misspelled by a native.  I was a linguist in Mississippi for two years in the 90s but never met anyone else.
Of course I was not working at or attending a university or college either and we normally do not go around with "Linguist" on our license plates.
