As far as Windows support is concerned... MS is phasing out full support
of 2000- security updates will still be available for the next few
years, but no feature/driver updates will be available without paying
for what they call "Extended Support." As for blocking a specific OS, I
know that you can create a bogus registry key requirement for an
operating system you want to restrict- that way, no matter how many
times a computer is updated it can never fulfill that requirement.
