Good luck.  Suggestion...look into Harvard style case studies.  This course
sounds like a perfect opportunity for their use.  I am unable to
specifically recommend a particular case or cases but perhaps someone has a
favorite or two.  Local HR directors should also prove to be valuable
speakers for this type of class.
