New York put out a booklet "Documenting Community Organizations" that
could be very useful.  It is geared toward use by the organizations
themselves (goes into "why save history?" and the basics of archives,
then moves on to specific types of records).  I have a print version
from years ago.  I Googled Documenting Community Organizations and came
up with three NY-based hits.  One of them is:

I don't know if all three versions are the same, or if the booklet has
been edited and one might be better than another.
